Parmesan Breadsticks


*3 1/4 cups all-purpose flour

*1 cup fresh grated parmesan cheese

*2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried

*2 teaspoons salt

*1 teaspoon fresh ground black pepper

*1 teaspoon rapid-rise dry yeast

*1 1/4 cups very warm water (120-130F)

*1/4 cup semolina flour or cornmeal

*1 teaspoon olive oil


~Directions~
1)Mix 1 1/2 cups of flour, Parmesan, rosemary, salt, pepper, and yeast in a large bowl.  Blend in water. Add 1 1/2 cups more flour to form soft dough. Dust work surface with remaining flour. Turn dough onto floured surface and knead until smooth and elastic., about 10 min, working in remaining flour to keep dough from sticking. Divide dough into 2 equal pieces. Cover with damp kitchen towel and let rest 10 min.

2)Sprinkle 2 16 x 12 in. sheets of wax paper with 1 tablespoon semolina each and and pat dough pieces into 10 x 6 in. rectangles. Brush w/ oil and cover with kitchen towel. Let rise in warm place until doubled, about 30 min. refrigerate 1 piece of dough.

3)Preheat oven to 400F. Line 2 baking sheets w/ parchment paper and sprinkle w/ half remaining semolina. Cut unrefrigerated dough crosswise into 20 equal strips, each about 8 inches long. Hold dough strips by the ends, twisting and stretching until 12 in. long. Place twists 1 in. apart on baking sheets. Let rise, uncovered, 10 min.

4) Lightly coat breadsticks w/ nonstick cooking spray. Bake 10 min. remove breadsticks from oven and lightly coat again w/ cooking spray. Bake until golden and crisp, about 8 min longer. Transfer to a wire rack and cool completely. Repeat with remaining dough

 

CHEX Caramel Crunch
*2 cups of each corn, rice , and wheat CHEX cereals

* 6 cups popped popcorn

*2 cups pretzel sticks

* 1 cup honey roasted peanuts

*1/2 cup packed brown sugar

*1/2 cup light corn syrup

*1/4 cup butter or margarine

*1/2 teaspoon vanilla
~Directions~
Microwave : mix cereals, popcorn, pretzels, and peanuts in a large microwavable bowl; set aside. Microwave brown sugar, corn syrup, butter, and vanilla in large bowl on high uncovered on high for 2 min or until boiling, stirring every minute. Pour over cereal mixture in bowl, stirring evenly until coated. Microwave 5-6 min  stirring after every minute. Spread on wax paper to cool.

 Fruit Boats with Orange- Balsamic Glaze
*1/4 cup balsamic vinegar

*1/4 teaspoon grated orange zest

*2 tablespoons fresh orange juice

*2 teaspoons brown sugar

*1 large cantaloupe

*1 pint strawberries

*1/2 pint blueberries

*1/2 pint  raspberries

*2 kiwi fruits

~Directions~

1)combine vinegar, zest, juice, and brown sugar in microwavable dish. Microwave on high until syrupy, 2-3 min. Or, cook over medium- high heat in small saucepan, 4-5 min. Set glaze aside.

2)Prepare cantaloupe boats. Put cantaloupe balls, strawberries, blueberries, raspberries, and kiwis in large bowls.

3)Drizzle fruit w/ glaze. Toss to coat. Spoon into cantaloupe boats and serve immediately.

 

 Marinara Sauce
*1 1/2 tablespoons olive oil               

*3 cloves garlic                             

*1 can Italian plumb tomatoes      

*1/4 cup tomato paste                    

*2 teaspoons dried basil leaves     

*1/2 teaspoon sugar                   

*1/4 teaspoon salt                     

*1/4 teaspoon red pepper flakes
~Directions~
Heat oil in large skillet over medium heat. Add garlic; cook and stir 3 min. Stir in remaining ingrediants. Bring to a boil. Reduce heat to low; simmer uncovered 10 min.
